2005 Traditional Tieguanyin

A traditionally processed, medium roast Tieguanyin with a lot of complexity. Look for notes of cherry, dark chocolate, and pie crust. The dessert-like notes have really developed beautifully as a result of careful aging. Lots of aged oolongs are extra heavily roasted, which means that years later, you still just taste the roast. This one has been roasted just enough to complement the tea and give it some backbone as it ages.

208f water. 5-7 grams. Start at 10 seconds, add 5 each time.
